Ingredients

  • 1 onion chopped
  • 2 celery sticks thinly sliced
  • 2 carrots grated
  • 2 garlic cloves minced
  • 3 tbsp olive oil
  • 2/3 cup red lentils
  • 1 can 14oz chopped tomatoes
  • 2 tbsp tomato paste
  • 2 cups vegetable broth
  • 1 tsp Italian Spices
  • Salt and pepper to taste

Instructions

  1. Grab a large saucepan, pour in the olive oil and heat it up. Add the celery, onion, carrots and garlic and cooked for about five minutes until they become tender.
  2. Put the remaining ingredients. Add salt and pepper to adjust the taste.
  3. Wait for it to boil. Once it boils, bring down the heat and simmer for twenty minutes until the sauce thickens and the lentils become soft.
  4. Pour over hot pasta and sprinkle with Parmesan cheese. Serve.
