Ingredients

  • 2 tbsp sesame oil
  • 1 chili finely chopped
  • 1 lb oriental mushrooms oyster, shitake etc
  • 3 1/2 oz pine nuts
  • 1 onion sliced
  • 1 lb green vegetables Pak Choi, spinach, Chinese cabbage etc
  • 11 oz baby corn halved lengthwise
  • 2 red bell peppers sliced
  • 3 ½ oz soy sauce
  • 1 Handful fresh cilantro chopped

Instructions

  1. Put the sesame oil in a wok and heat it up. Add garlic, pine nuts and chili.
  2. Cook on high heat for about half a minute.
  3. Place baby corn, mushrooms, red pepper, onion and green vegetables and sauté for about 3-4 minutes.
  4. Add the soy sauce and fry for a minute.
  5. Add a dash of cilantro, mix and best served with rice noodles.
