Thai Chicken Salad Recipe

Thai Chicken's another frugalicious and fast dinner idea from The Budget Diet girl, and it's a great way to us up leftover grilled chicken. Serve it for a simple summer supper or take it on a picnic.

  • 3 T. sugar
  • 3 T. vinegar
  • 1/2 c. vegetable oil
  • 1 package oriental flavored ramen noodles
  • 1, 16 oz. package tri-color coleslaw no dressing
  • 2 c. grilled chicken sliced
  • 1/2 c. sliced almonds
  • 3 green onions sliced
  • 1 can chunk pineapple or use fresh
  • 1 can mandarin oranges


  1. Mix sugar, vinegar, oil and flavoring packet from noodles in a large bowl.
  2. Break up noodles and soak 3 hours or longer.
  3. Add remaining ingredients, stir and chill 1 hour before serving.

Recipe Notes

Add a loaf of French bread, and enjoy dinner!
