Sweet Cherry and Vegetable Summer Salad
- 2 cups fresh sweet cherries pitted
- 1 cup sugar snap peas
- 1 cucumber seeded and sliced
- 1 cup radishes sliced
- 2 tablespoons white wine vinegar
- 1 tablespoon Balsamic vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sesame seeds toasted
- 1/8 teaspoon pepper
Pour water into a medium-sized saucepan. Put in high heat and wait until it boils.
Place the sugar snap peas and wait until it grows pale for about one minute. Turn off the heat and wash the peas with cold water to cool down. Drain the water well.
Put the sugar snap peas in a mixing bowl. Place the cucumbers, radishes and cherries. Mix.
Grab another bowl and pour the two types of vinegar. Place the sesame oil. Stir.
Add the sesame seeds. Put dash of pepper. Stir.
Pour it on the cherries and vegetables. Cover. Put in a fridge for one to two hours.
Mix the ingredients well before serving.
