5 Quick and Easy Dinner Ideas Using Rotisserie Chicken

It’s 5:00, and you have no idea what you’re serving for dinner.

Does that mean leftovers again?

Will your family pitch a fit if you tell them you’re serving cereal for dinner?

Do you decide to blow the budget and go out for dinner, again?

How about a rotisserie chicken to the rescue…it’s a busy mom’s go-to dinner!

5 Quick and Easy Dinner Ideas using a Rotisserie Chicken
I don’t really consider these recipes because in a pinch you need something quick and simple…no long list of ingredients or rigid instructions.

  • BBQ Chicken
    Shred the rotisserie chicken, stir in BBQ sauce and serve on buns.
  • BBQ Chicken Pizza
    Spread softened cream cheese on a pizza crust, top with 1/2 cup bbq sauce, top with 8 oz. of shredded Colby/Jack cheese, shred the rotisserie chicken and stir in 2 tablespoons BBQ sauce, scatter on pizza crust and top with diced onion. The pizza crust can be a simple pita or start with a store bought ball of pizza dough.
  • Chicken Caesar Salad
    Add chicken to a Caesar Salad or any salad to make it a meal.
  • Chicken Quesadillas
    Chicken and cheese stuffed in a tortilla…it couldn’t be easier!
  • Chicken Tacos
    Shred, stir in salsa and ranch dressing to taste. Stuff your tacos!

 

Money Saving Tip #1 – Costco sells rotisserie chickens for less than $5, and they’re about twice the size of the ones you find in the grocery.

Money Saving Tip #2 – Our Kroger marks the rotisserie chickens to half price after 7:30, so it’s worth checking the policy at your local store. You can always stock up, chop up and freeze!
