No-Bake Chocolate Oatmeal Cookies

Craving a quick, homemade chocolate treat? These delicious cookies have been my go-to recipe since I learned to make them in Girl Scouts. The ingredients are all items most people have on hand, so you don't even need to make a trip to the store. 10 minutes and they're done! My teenage daughter seems to have inherited my love of making sweets, and whenever she asks, "what can I make," the answer is usually No-Bake Chocolate Oatmeal Cookies.

Ingredients

  • 2 cups sugar
  • 1/2 cup milk
  • 4 tablespoons cocoa powder
  • 1 stick butter
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt
  • 3 cups quick cooking or rolled oats quick cooking oats do seem to hold together better

Instructions

  1. Mix together sugar, milk, cocoa and butter in a large saucepan.
  2. Bring to a boil over medium heat and stir constantly for 1 minute.
  3. Remove from heat and add peanut butter, vanilla, salt. Stir until peanut butter melts and mixture is smooth.
  4. Stir in oats.
  5. On a sheet of wax paper, drop by tablespoon size scoops. Your cookies will likely flatten out, but they can also be little mounds...it doesn't really matter.
  6. Let cool and harden - about 20 minutes.
  7. Enjoy!
