Chicken Chili Recipe

Frugalicious, fast and perfect for a Super Bowl Party! Serve with tortilla chips.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 onions chopped or use 1 1/2 cups of frozen chopped onion*
  • 4 garlic cloves minced
  • 1, 7 ounce can green chiles diced (do not drain)
  • 2 teaspoons cumin
  • 1/4 teaspoon cayenne pepper
  • 4 cans great northern beans do not drain
  • 4 cups chicken broth
  • 8 oz. pepper jack cheese shredded
  • 8 oz. Monterey jack cheese shredded
  • optional: garnish with sour cream and diced tomatoes
  • Simmer chicken in a large saucepan until tender drain and shred. Approximately 15 minutes.
  • Heat olive oil and saute onions garlic, green chiles, cumin and cayenne pepper for 3 minutes.
  • Add the shredded chicken beans, chicken broth and cheese.
  • Simmer 15 minutes.
  • Optional: garnish with sour cream and diced tomatoes.

Instructions

  1. Simmer chicken in a large saucepan until tender, drain and shred. Approximately 15 minutes.
  2. Heat olive oil and saute onions, garlic, green chiles, cumin and cayenne pepper for 3 minutes.
  3. Add the shredded chicken, beans, chicken broth and cheese.
  4. Simmer 15 minutes.
  5. Optional: garnish with sour cream and diced tomatoes.

Recipe Notes

*I love using frozen chopped onion in recipes...it's a timesaver and no tears!
