Portobello Mushroom Tacos
- 1 tablespoon olive oil
- 1, 24 ounce package of baby portobello mushrooms* sliced and stems removed
- 1 red bell pepper sliced
- 1 onion sliced
- 1 tablespoon taco seasoning**
- 8 fajita size corn or flour tortillas
- optional toppings: cheese sour cream, guacamole, lettuce, tomato
Heat olive oil in a large skillet.
Add the mushrooms, bell pepper and onion - saute 8 minutes or until tender.
Drain off the excess water.
Stir in the taco seasoning.
Serve in tortillas.
Add additional topping if desired.
