Crock Pot Chicken Caesar Sandwiches

My family has declared Crock Pot Chicken Caesar Sandwiches the best sandwich ever...need I say more? Yes! It's quick and easy thanks to frozen chicken breasts and a crock pot.

Ingredients

  • 4 frozen boneless skinless chicken breasts (frugal tip: always keep a big bag of Costco's frozen chicken breasts in your freezer!)
  • 1 cup Caesar dressing our favorite is T. Marzetti's refrigerated Caesar dressing
  • 1/2 cup shredded parmesan cheese
  • 1 teaspoon pepper
  • romaine lettuce leaves
  • hamburger buns or Torta Rolls from Costco the best!

Instructions

  1. Place frozen chicken breasts in a crock pot.
  2. Add 1/2 cup water and cook on low for 3 - 4 hours or until chicken is done.*
  3. Drain chicken and return to crock pot.
  4. Shred chicken using the back of a spoon.
  5. Add caesar dressing, parmesan and pepper.
  6. Stir to combine.
  7. Cook on low for 30 more minutes.
  8. Serve on toasted buns with romaine.

I would assume that if one used a bar-b-cue sauce such as Sweet Baby Ray’s, instead of the caesar’s, this recipe would be just as good. I will be trying it. SOON

When I leave for work in the morning I am gone for 9 hours. To cook something for 4 hours means that it would either sit 4-5 hours prior to cooking at room temp, or sit after cooking for that amount of time, and that would be if I had a timer on my crock. I place the frozen chicken in the fridge the night before, come in from work the next day and parboil the chicken for literally ten minutes, then follow the directions for the rest of the recipe. It doesn’t require the 30 minutes after cooking as long as it is heated through. Takes only about 15 minutes to make on the stove top so why use a crock pot? Everyone is crock pot crazy at the moment, but so many recipes are easier and faster to make on the stove top. Just mentioning…

Love this! I can’t believe after 18 years of parenting Costco style, I have never had a bag of their frozen chicken in my freezer! Gotta fix that…
