Crock Pot Chicken Taco Recipe

This Chicken Taco recipe will soon be one of your favorite quick and easy dinners because it's a crock pot Chicken Taco. It takes less than 5 minutes to put the ingredients in the crock pot, and 6 hours later you'll have a delicious shredded chicken taco. Effortless!

Ingredients

  • 6 frozen chicken breasts do not thaw
  • 1 cup salsa
  • 1 packet of taco seasoning or use 2 tablespoons of The Budget Diet's Homemade Taco Seasoning*
  • 1/4 cup ranch dressing
  • 18 hard of soft taco shells
  • Mexican blend or Cheddar cheese shredded
  • shredded lettuce
  • diced tomato

Instructions

  1. Place frozen chicken breasts in a crock pot.
  2. Add salsa.
  3. Sprinkle with taco seasoning.
  4. Cook on low for 6 hours or until chicken shreds easily** with the back of a spoon.
  5. Shred chicken and add ranch dressing.
  6. Fill hard or soft taco shells with chicken, cheese, shredded lettuce and diced tomato.

Recipe Notes

*The Budget Diet's Homemade Taco Seasoning: 4 tablespoons chili powder, 2 tablespoons cumin, 1 tablespoon dried minced onion, 1 tablespoon black pepper, 2 teaspoons paprika, 2 teaspoons salt, 1 teaspoon garlic powder, 1 teaspoon crushed red pepper, 1 teaspoon dried oregano. Stir all ingredients together and store in an airtight container. This recipe makes the equivalent of 5 taco seasoning packets for a fraction of the cost! **"easily" is the key word! If it is difficult to shred with the back of the spoon, and the chicken seems tough...it's not ready!

I just finished making this, it is now 1:34 am. Has been in for 6 hours. I went to shred chicken and give it a taste, freaking amazing!!!!! My mom woke up to the smell and I gave her a taste and she said, “mmmmm!” lol so now we’re letting it cool in the crock pot. Will heat up tomorrow and add ranch and cheese and make the taco’s for lunch and again for dinner. Thank you so much! Excited to try the whole taco. That flavor is the bomb! lol

I absolutely love this recipe! I’ve made it a few times! I ALWAYS forget to defrost the chicken and this is perfect. I leave out the tomatoes because the hubs and I don’t like ’em and the salsa has plenty in it for our liking. It has so few ingredients, that I always have them on hand so it doesn’t require a lot of planning ahead! To be honest, I thought the ranch was a weird addition – but it does something magical to the mix that makes them taste AWESOME. It’s even really good re-heated for lunch the next day! Thank you for this recipe!

This was so easy to make and so delicious! Can’t wait to make it again! I used a smoky chipotle salsa…yummy!! Also, I fried my own tortillas rather than using store bought tortillas. ❤️
