Cauliflower Salad

Cauliflower is considered bland by some, but this simple salad recipe will make them change their minds. Ingredients

  • 1 cup shredded carrots
  • 1 cup sliced cauliflower
  • ½ cup chopped pecans
  • 1 cup spinach or other greens
  • Black pepper

Instructions

  1. Chop the cauliflower into 1/4 to one-inch slices.
  2. Tear the spinach or other greens into tiny pieces.
  3. Combine and toss all of the ingredients in a bowl.
  4. Add a dash of pepper according to your taste.
  5. Put in a fridge for a few hours and add your favorite fat-free dressing.
