Ingredients
2tbspolive or vegetable oil
4chicken breastscut into bite size pieces
2medium onionsdiced
2cans chopped tomatoes
½cupreduced fat coconut milk
½tbspcoconutoptional
1tbspcurry powderor more if you like it hot
Instructions
Heat up the oil and saute onion until it becomes tender.
Pour the curry powder and mix. Put the chicken breasts and cook until it becomes tender.
Add the tomatoes and wait for about one minute.
Put the coconut milk and let it simmer for about fifteen minutes.
