Crock Pot Pumpkin Puree

Ingredients

  • 1 pumpkin small pie pumpkins work best!

Instructions

  1. Wash pumpkin.
  2. Cut in half and scoop out the seeds and stringy stuff!
  3. Remove the stem.
  4. Cut pumpkin into large chunks.
  5. Place pumpkin in crock pot (2 small pumpkins are just the right size for most crock pots.)
  6. Cover and cook on low for 3 - 5 hours or until very soft.
  7. Remove skin and discard.
  8. Using an immersion or stick blender, puree the pumpkin right in the crock pot.
  9. Freeze in 1 3/4 cup portions which are equal to 1, 15 oz. can of pumpkin.

Recipe Notes

Most recipes call for 1, 15 oz. can of pumpkin which is equal to 1 3/4 cups. If you have a favorite pumpkin recipe that calls for more or less pumpkin, you may want to freeze and label your portions accordingly.
