Ingredients

  • 1 tablespoon olive oil
  • 1, 24 ounce package of baby portobello mushrooms* sliced and stems removed
  • 1 red bell pepper sliced
  • 1 onion sliced
  • 1 tablespoon taco seasoning**
  • 8 fajita size corn or flour tortillas
  • optional toppings: cheese sour cream, guacamole, lettuce, tomato

Instructions

  1. Heat olive oil in a large skillet.
  2. Add the mushrooms, bell pepper and onion - saute 8 minutes or until tender.
  3. Drain off the excess water.
  4. Stir in the taco seasoning.
  5. Serve in tortillas.
  6. Add additional topping if desired.
