I highly recommend this nutritious and "lots-of-crunch" salad. This colorful salad mix the flavors of fresh herbs, pine nuts and roast beets. Beets are root veggie that come in various colors like white, yellow or deep red. Oregano, dill, lemon thyme and other herbs are great substitutes to fresh basil. If fresh herbs are not available in your area, then dried basil is a great option.

4medium roasted beetsdiced
2tablespoonsolive oil
2tablespoonlemon juice
1tablespoonchopped fresh basil
Optional: Field greens or lettuce mix
1/4cupcrumbled feta
1/4cuppine nuts

Instructions
Get a bowl, put lemon juice, lemon thyme and oil and mix them thoroughly.
Next, put beets and stir up until the ingredients are blended well.
Put the green veggies in serving portions. Then, put beets on top.
Finish it off with pine nuts, feta and salt and pepper.
Recipe Notes
If you plan to have canned beets, then you must use at least 4 cans because canned beets are small.
You can also have hemp oil or sunflower oil instead of olive oil. Almonds and walnuts are great choices as alternative to pine nuts. Feta could also be replaced with goat cheese. You can try other alternatives to create different flavors.
