10ozcelerythinly sliced
1small oniondiced
1tbspextra-virgin olive oil
1tbspall-purpose flour
1cupof vegetable stockideally low sodium
½cupskim milk
Juice of 1 lemon
3ozfeta cheesediced
Handful of fresh parsleychopped
Instructions
Saute the onion in a saucepan until it becomes tender but avoid to make it brown.
Put the celery. Stir.
Put dash of flour and continue to stir for several minutes. Add the vegetable stock and wait until it boils. Make sure to stir regularly. Once it boils, lower down the heat, cover and let it simmer for at least 20 minutes.
Put the soup in a blender and blend until it gets smooth.
Bring back the soup into the saucepan, place milk and you may add lemon juice, salt and pepper for your taste. Reheat.
Add parsley and feta cheese cubes for one creamy, tasty celery soup.
