Why am I always craving Girl Scout Thin Mint Cookies?
I don’t have the answers, but I do have the solution – a Thin Mint cookie recipe with only 2 ingredients! Your waistline may curse me for sharing this recipe, but your cravings and wallet will thank me!

Thin Mint Cookie Recipe
Ingredients
- Andes Mints 1 mint per cookie
- Vanilla Wafers store brand is fine
Instructions

Place the Andes Mints in a microwave safe bowl and microwave on high until melted. The time will vary depending upon how many mints you are using.

Dip the Vanilla Wafer in the melted Andes Mints and place on a wax paper lined tray. I don't cover the entire cookie because it's quicker just to leave the part of the cookie you're holding without chocolate.

Refrigerate 5 minutes.
