Salad:
1bag baby spinach
1/2pintgrape tomatoeshalved
1/2of a small red onionthinly sliced
1red bell pepperthinly sliced
1/2cucumberpeeled and diced
1/2cuppepperoncini pepperssliced
1/2cupkalamata olivessliced
1cupfeta cheesecrumbled
1can garbanzo beansoptional, but ideal to make this salad a meal
Dressing:
1/8cupextra-virgin olive oil
2tablespoonsred wine vinegar
1/2teaspoondried oregano
salt & pepper to taste
Instructions
Combine all salad ingredients in a large bowl.
