This spinach salad is colorful and perfect for summertime. The homemade poppyseed dressing is delicious, easy and frugal, but if you want to take a short cut try Brianna’s Poppyseed dressing. Brianna’s dressing is delicious but pricey, so The Budget Diet way is homemade!
Ingredients
  • 1/4 cup mayonnaise
  • 2 tablespoons milk
  • 2 1/2 tablespoons sugar
  • 1 1/2 teaspoons white vinegar
  • 1 1/2 teaspoons poppyseeds
  • 1 bag baby spinach
  • 1 cup strawberries, sliced
  • 1 peach, thinly sliced
  • 1/4 cup almonds, sliced (optional)
Instructions
  1. Whisk together mayonnaise, milk, sugar, white vinegar and poppyseeds to make the dressing.
  2. Toss together spinach, strawberries, peaches and almonds with the dressing about 30 minutes before serving.

    I just recently discovered using apple cider vinegar with mayo to give a salad a sweeter taste. I wonder what the difference in taste is in the salad between apple cider and white vinegar?

    Let me know if you try it with apple cider vinegar. You may want to use a bit less sugar.
