Why am I always craving Girl Scout Thin Mint Cookies?
I don’t have the answers, but I do have the solution – a Thin Mint cookie recipe with only 2 ingredients! Your waistline may curse me for sharing this recipe, but your cravings and wallet will thank me!
- Andes Mints (1 mint per cookie)
- Vanilla Wafers (store brand is fine)
- Place the Andes Mints in a microwave safe bowl and microwave on high until melted. The time will vary depending upon how many mints you are using.
- Dip the Vanilla Wafer in the melted Andes Mints and place on a wax paper lined tray. I don't cover the entire cookie because it's quicker just to leave the part of the cookie you're holding without chocolate.
- Refrigerate 5 minutes.
