Cook up a great Super Bowl Party with a big pot of Chicken Chili…everyone will want this easy recipe!

Frugalicious, fast and perfect for a Super Bowl Party! Serve with tortilla chips.
Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 onions, chopped or use 1½ cups of frozen chopped onion*
- 4 garlic cloves, minced
- 1, 7 ounce can green chiles, diced (do not drain)
- 2 teaspoons cumin
- ¼ teaspoon cayenne pepper
- 4 cans great northern beans (do not drain)
- 4 cups chicken broth
- 8 oz. pepper jack cheese, shredded
- 8 oz. Monterey jack cheese, shredded
- optional: garnish with sour cream and diced tomatoes
- Simmer chicken in a large saucepan until tender, drain and shred. Approximately 15 minutes.
- Heat olive oil and saute onions, garlic, green chiles, cumin and cayenne pepper for 3 minutes.
- Add the shredded chicken, beans, chicken broth and cheese.
- Simmer 15 minutes.
- Optional: garnish with sour cream and diced tomatoes.

*I love using frozen chopped onion in recipes…it’s a timesaver and no tears!
