The Cheese Dip

I call this The Cheese Dip that will make you famous because it’s guaranteed to be the hit of the party! Serve it at your Super Bowl Party, serve it at a cocktail party, serve it anywhere and you’ll get rave reviews! It’s super easy, and you’ll have everyone asking for the recipe. Try it with jalapeño jack if you like a kick…otherwise, stick to the cheddar.
Ingredients
  • 1, 8 oz. package cream cheese
  • 2 cups grated cheddar cheese OR grated jalapeño jack
  • 1 cup mayonnaise
  • 1 small purple onion, diced
  • Wheat Thins or Frito’s Scoops for dipping
Instructions
  1. Place all ingredients in a shallow baking dish (a 9″ square pan or round quiche pan will be perfect!)
  2. Microwave on high for about 2 minutes or until the ingredients are melted enough to stir together.
  3. Stir until combined.
  4. Bake at 350 for 20 minutes or until lightly browned.
  5. Serve with Wheat Thins or Frito’s Scoops for dipping

Better Than Baked Potatoes

We call these Better Than Baked Potatoes because they are, and they look prettier on the plate!
Ingredients
  • 8 medium red potatoes
  • 2 tablespoons of olive oil
  • salt & pepper
  • optional: sour cream, cilantro
Instructions
  1. Preheat oven to 450.
  2. Slice each potato thinly without cutting all the way through…just like the picture!
  3. Place the potatoes on a plate, cover with wax paper and microwave 10 minutes.
  4. Transfer the potatoes to a greased 9 x 9 pan.
  5. Brush olive oil all over potatoes.
  6. Sprinkle with salt & pepper.
  7. Bake 20 – 25 minutes or until light brown and crispy.
  8. Top with sour cream and cilantro if desired.

The best way to save on alcoholic beverages at a party??? Serve a signature cocktail like Poinsettia Punch…it’s festive and frugal because nobody will know that you used cheap champagne! You’ll have everyone asking for the recipe, and they’ll laugh when they see how easy it is!
Ingredients
  • 1 bottle cran-raspberry juice, chilled
  • 1 bottle Champagne, chilled (cheap is fine!)
  • 1 liter Sprite (store brand is fine!)
  • Optional: frozen raspberries to float in the glass
  • Non-alcoholic version: eliminate the Champagne and use 2 liters of Sprite.
Instructions
  1. Mix all ingredients together in a large pitcher or punch bowl.
  2. Serve and enjoy!
